MOON CAKE
On Friday I got an incredible urge to make a cake and post it to my family. The last cake I posted was to my grandfather. When he received the parcel he phoned me up absolutely delighted, "Was that you ? " he said. I'd made a ginger cake; one of his favourites , with large chunks of raw ginger embedded in the mix for that extra bite. I also popped in a few teabags for good measure to help wash it down. We are not accustomed to dishing out stingy pieces of cake in my family... I always remember my mum making fantastic fruit cakes with lots of sultanas. We used to take them on walks with us and also when we were camping. In my childhood we regularly used to go away on trips with 2 large Alsatians in a VW camper van.I remember sitting eating cake inside the van when it was raining outside after a long walk. The dogs liked cake too when they could get it.
The secret to a good cake according to her is lots of eggs and butter. Well it clearly worked there were never many left overs. I also believe that good cake contains a lot of love for the people you have made it for which hers clearly did.This time however I made a monster of a cake and left it out to cool by the light of the moon before icing it with lime and cream cheese icing and filling it with lemon curd. I went on a herb walk organised by a friend and we ate some of the cake afterwards. There are still however enough sizeable chunks left to post.....
